1. Peel the mangoes, remove the stone and puree the flesh. Add the icing sugar and the quark and mix thoroughly. 2. Dissolve the gelatine in a little water (about 50ml - follow the instructions for the gelatine). Add this to the mousse mixture and stir in thoroughly. Finally, stir in the cream. 3. Set the mousse in the fridge. Once it is set you can serve it. This is delicious on its own, or you can serve it with pureed strawberries as shown in the picture.
