Blueberry Pancakes

Method
1. Place all the ingredients except the blueberries together in a bowl and mix thoroughly. It should have a fairly thick consistency.

2. Melt a little extra butter in a hot griddle pan, and add in about a quarter of the pancake mixture. Sprinkle a quarter of the blueberries on top.

3. Fry until bubbles start to appear in the pancake (see picture), then turn over and continue frying for a couple of minutes.


You can easily adapt this recipe to serve more people.
The pancakes are delicious served on their own, or drizzled with maple syrup.

Recipe Ingredients
1 Eggs
225ml Milk
2 tablespoons Butter
(melted)
125g Flour (plain)
2 tablespoons Sugar
1.5 teaspoons Baking Powder
200g Blueberries
(fresh or frozen)
1/4 teaspoon Salt
1/4 teaspoon Ground Nutmeg
